| Bean Season in Shanghai Piles of fava beans, English peas and snow peas overflow in the markets in Shanghai in early May. Favas sell for RMB 1.5 for ½ kg. (US$0.18) and Shanghai ladies eagerly exchange their favorite fava recipes while they inspect the beans, preparing to make a purchase. Eavesdropping on their conversation, I hear that one lady plans to stir fry the beans in a wok with some oil and a little salt. Another plans to mix them with shredded cabbage and chives. One thing they all agree on is that the favas must be young and fresh so it's not necessary to remove the skin on each bean. |
