| Thousands of private "mom-and-pop" type restaurants have sprung up in Beijing. The owners and cooks shop for restaurant supplies at the "free markets". With the luxury of a three-wheel shopping cart, they can pull right up to the market stall in the early hours, before the market gets too crowded with foot traffic.
