| Soy bean milk soup is the whey produced from making bean curd. It's a thin broth that looks like skimmed milk. Sugar or salt are added as flavorings. A bowl costs RMB 0.5 (US$ 0.06). Local residents bring their own pots to fill up and take home to eat. | Thin and tender layers of quivering doufu, resembing calves brains, are skimmed off the surface of a steaming pot into a small bowl.
