Chinese Crepe

A typical breakfast food in northern China is a crepe, literally called a "both sides browned pancake" in Chinese.  The outside wrapper closely resembles a French crepe and is prepared in much the same way.

Step 1

A thin layer of flour-based batter is
spread on a hot griddle with a
small "hoe", like a crepe.

After the first side is done, the cook flips the pancake and immediately breaks a whole egg on top, then spreads it evenly over the entire surface. Before folding the crepe into quarters, the cook adds the customer's choice of toppings:   chopped scallions, hoisin sauce, chili sauce and a square of fried dough or several "oil sticks".
