| The Chinese rarely roll their own noodles at home. So vendors specializing in fresh noodles do a brisk business, particularly in the "wheat-eating" parts of China, north of the Yangtze River. Chinese noodles are very similar to Italian pasta and are a popular breakfast food, topped with a savory sauce or in a clear broth.
