Machine-Made Noodles

The Chinese rarely roll their own noodles at home.  So vendors specializing in fresh noodles do a brisk business, particularly in the "wheat-eating" parts of China, north of the Yangtze River.  Chinese noodles are very similar to Italian pasta and are a popular breakfast food, topped with a savory sauce or in a clear broth.  A "jin" (1/2 kg) of fresh-rolled noodles costs RMB 1.2 (US$ 0.14).
