Fried
Cream Puffs
(nai you zha gao)
| These fried cream puffs are made from a thick honey-colored batter consisting of flour, milk, eggs and "yellow oil". While the dough looks lumpy, it puffs up during frying to make a wonderfully light and airy breakfast treat. These fried cream puffs have no filling, but are topped with coarse sugar. The secret for making a light dough is to beat in the oil drop-by-drop. | |
